The seasoning, made in proper rooms where the environmental features of traditional cellars is carefully reproduced, has a duration ranging between forty days - for the demi-seasoned type - to six months for the seasoned pecorino. The seasoning must be done in a very moist environment, at a temperature of about 10 centigrades.
The rind treatment of RENIERI's Pecorino and Marzolino cheeses is completely hand made with all-natural ingredients: tomato puree, olive oil and vegetable charcoal.
