Finocchiona is the most characteristic of Tuscan cured meats. It is made by finely mincing choice cuts of pork from the finest heavy Italian pigs and adding wild fennel seeds to the mixture.
It has a very soft consistency and the slice tends to crumble.
The aroma and taste are unmistakable.
