I MARZOLINI
RENIERI's valued Marzolino-cheeses are made from sheep-milk alone from the Chianti region between Firenze and Siena.
It is oval shaped, with rounded edges, and weights about 500 g.
It has a firm, milk-white paste, soft and sweet in the fresh cheese, with a full and strong taste in the seasoned. The rind is thin, white in the fresh cheese, red from tomato in the demi-seasoned type, and darker in the seasoned.
